Raspberry-Mint Bellinis

Lovely for brunch, nicely balanced.

Ingredients

4 oz. Spearmint Keep It Simple Syrup®

2 cups fresh raspberries

2 oz. freshly-squeezed lime juice (about 4 limes)

1 bottle prosecco or champagne

Directions

1Purée first 3 ingredients in a blender until smooth. Strain mixture to remove seeds. Fill 6 champagne flutes with 1 part purée, 2 - 3 parts prosecco or champagne (to taste). Garnish with spearmint leaves.
