Both Chile and Peru claim the classic Pisco Sour as their own. Egg whites give it a lovely froth. Make the traditional version with pure sugar cane syrup, or amp up the citrus flavor with our Lemon Zest KISS.
2 oz Pisco
1 oz fresh lime juice
½ oz Sugar Cane or Lemon Zest Keep It Simple Syrup
1 fresh egg white
1Add all the ingredients to a shaker and fill with ice.
2Shake vigorously and strain into a highball glass or champagne flute.
3Garnish with a lime wheel and 2-3 drops of bitters; allow to settle in the foam of the cocktail.
4Using a straw, swirl the bitters into a simple design.
